When cooking a meal, as most meals seem, it is a last minute decision solely based upon looking in the fridge/freezer/pantry and deciding what will be the easiest to prepare. As it happens with meal planning in this fashion, it is only during the cooking process does one realize how much better dinner would be with a warm slice of crunchy homemade bread, a chunk of fluffy store made French bread, or freshly baked croissant rolls. Of course, one never has the forethought or time to make homemade bread even with the pandemic amongst us, the store doesn't always have fresh made French bread loaves, and there are never croissant rolls in the fridge because when you do you bake them. When the unexpected sudden need for warm bread strikes, one can simply use this oh, so versatile T&T 5 Ingredient Olive Oil Bread to fill the void.

Over the past several months, No Knead Flatbread as we call them have been made in various flavors including Greek, Italian, Mexican, Plain Salt & Pepper, and Cajun. Fresh herbs along with dried have been used interchangeably with no effects to the flavoring.
In fact the biggest change to flavor does not come from the added seasonings but the type of oil used instead. Originally olive oil was used but the second time the recipe was made only grapeseed oil was on hand. Table counterparts love the strong flavor of the olive oil but I find the grapeseed oil to be a better choice as it allows the seasonings to come through. Vegetable oil has been used but find it too heavy making the bread dense. Extra virgin olive oil has been used and it a great alternative to standard olive oil with its lighter coloring dissolving into the bread.
Making two batches at a time produces eight lovely bread discs meaning there is always one or two leftover for the next days lunch. Warmed in the microwave they are soft and tender. Warmed in the microwave and then browned on a skillet is a perfection.
