What to do with leftover barley?
Barley was made for dinner but those plans were scratched. With fresh, slightly undercooked barley sitting in the pot, a warm creamy pot of cinnamon pudding was made. Just like stovetop rice pudding but better.
Ingredients:
Two cups cooked barley
Two cups milk
Two tablespoons sugar
One teaspoon cinnamon
Instructions:
To a pot, add all ingredients and cook on low until milk has thickened.

Was perfect on a cold winters days but would have been great served cold, too.
