Eating a colorful dinner plate can be challenging. Finding a bag of multi-colored finger potatoes on sale makes the challenge easy peasy. Roasted Baby Potatoes with Garlic and Rosemary sounded like a great starting base.
The potato quantity was reduced from three pounds to two and the following was added: one bunch asparagus (diced), two large carrots (diced), and half bag cranberries (left whole). Red onion and garlic was omitted. Veggies were tossed with ample amounts of salt, pepper, dried rosemary, and a teaspoon of dill.

Just look at the coloring of this dish! And when served with the last bit of turkey breast, the colors stand out even more. Vitamins, minerals, fiber, protein, and just bit of sweet. Delicious!
