Ah, the cold weather. With another day of blistery cold upon us and another one or two days ahead of us, this table needed a body warming, soul filling soup stat. Something more than just the down and dirty potato soup, something easier than vegetable beef soup, and something lighter than chicken and dumplings last night. Potato Leek Soup was literally a last minute decision meal that turned out just beautiful.
Modifications Made:
Three chicken bouillon cubes replaced low stock chicken stock and salt was omitted.

We all liked the flavor but the consistency was odd. It was thick and creamy like warm pudding. Not overly leek or heavy on the cream, the soup would have been better with bacon and oyster crackers. It needed something with chew.
